Queen of Salads
not to brag but i may have mastered the salad. turns out if you put ANYTHING that you want in one - they are amazing. i have started putting apples slices, onion, seeds, avocado and cherry tomatoes with some champagne vinaigrette. as long as there is a protein of sorts with something a little heaver (avocado for me!) you are filled up & get all the nutrients ya need!


beets
running low on food supplies in preparation for my return home for christmas. i've succumbed to canned organic beets. turns out they are delicious! with a little champagne vinaigrette it is an easy and nutrient filled lunch.


maple leaf cookies from trader joes. i know these are premade but you just have to. yum :)


sick no more soup
you'll need: kale, bean of choice, veggy broth, onion, garlic, carrots, tofurkey sausage, thyme, basil, sriracha, rosemary, spinach

if you're sick this soup will spice it out of ya! just heat up the broth with all the veggies. then skillet up the veggy sausage (i like adding mushrooms) and garlic. toss it all in the pot together - spice to taste.

you really cant have the sniffles very long if you eat this for a whole day.



broccoli & wheatberry salad

you'll need: dried cranberries or pomegranates, broccoli, whole wheat berries, veganaise, cherry tomato

easiest combo ever. just steam the broccoli. boil 7 cups of water to 2 cups of wheatberries til water is cooked off. chop tomatoes & cranberries. mix together with veganaise to taste.
boom.

p.s. add spinach or green onions if ya'd like!
